Wrapped Herb Chicken

Ingredients

  • 6 boneless, skinned chicken breasts
  • 6 Tbsp. chives, tarragon or chervil (any fresh herb), chopped
  • 3/4 c. fresh lemon juice
  • 6 tsp. onion powder or to taste
  • 6 Tbsp. butter
  • 6 Tbsp. fresh parsley, chopped

Instructions

  1. Preheat oven to 375°.
  2. Place chicken on a large sheet of foil. Top each piece with 1 tablespoon herbs, 2 tablespoons lemon juice, 1 teaspoon onion powder, 1 tablespoon butter and 1 tablespoon parsley.
  3. Fold foil tightly around the chicken with double folds on each edge.
  4. Bake for 30 minutes.
  5. Serves 3 to 6 people.
