Ingredients

  • 4 lb. beef round boneless rump roast
  • 2 1/4 oz. jar sliced mushrooms, drained
  • 1 to 2 cloves of garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. If roast is a triangular-shaped piece, cut 2 horizonal slits about 2 inches apart almost to other side to make two two deep pockets.
  2. Stuff mushrooms, garlic, salt and pepper into pockets. Season outside of roast with a little additional salt and pepper and roast as directed.
  3. If roast is rolled and tied, carefully unroll.
  4. Sprinkle mushrooms, garlic, salt and pepper over unrolled roast.
  5. Re-roll and re-tie.
  6. Season outside of roast with a little additional salt and pepper.
  7. Insert meat thermometer into thickest part of meat.
  8. Place roast, fat side up, on rack in shallow roasting pan.
  9. Roast at 325° for 1 3/4 hours or 160° on thermometer for medium.
