- If roast is a triangular-shaped piece, cut 2 horizonal slits about 2 inches apart almost to other side to make two two deep pockets.
- Stuff mushrooms, garlic, salt and pepper into pockets. Season outside of roast with a little additional salt and pepper and roast as directed.
- If roast is rolled and tied, carefully unroll.
- Sprinkle mushrooms, garlic, salt and pepper over unrolled roast.
- Re-roll and re-tie.
- Season outside of roast with a little additional salt and pepper.
- Insert meat thermometer into thickest part of meat.
- Place roast, fat side up, on rack in shallow roasting pan.
- Roast at 325° for 1 3/4 hours or 160° on thermometer for medium.
