Instructions
- Place egg yolks in the top of a double boiler and add sugar.
- Beat with a mixer at medium speed until the mixture is pale yellow and creamy.
- Place water in the bottom of the double boiler and bring to a boil over high heat; reduce to low heat.
- Place the top of the double boiler over the simmering water.
- Gradually beat in 1/4 cup Marsala wine into the egg yolks; beat for 1 minute.
- Gradually add the remaining Marsala and white wine while continuously beating.
- Continue cooking the custard over gently simmering water for 8 to 10 minutes.
- Stir the bottom and sides frequently to prevent overcooking.
- Immediately remove the top of the double boiler from the water and whisk briefly.
- Pour into 4 individual serving dishes.
- Serve warm or cold with berries, preserves, or cookies.
