Ingredients

  • 5 egg yolks
  • 1/4 cup sugar
  • 1 cup Marsala wine
  • 1/4 cup dry white wine

Instructions

  1. Place egg yolks in the top of a double boiler and add sugar.
  2. Beat with a mixer at medium speed until the mixture is pale yellow and creamy.
  3. Place water in the bottom of the double boiler and bring to a boil over high heat; reduce to low heat.
  4. Place the top of the double boiler over the simmering water.
  5. Gradually beat in 1/4 cup Marsala wine into the egg yolks; beat for 1 minute.
  6. Gradually add the remaining Marsala and white wine while continuously beating.
  7. Continue cooking the custard over gently simmering water for 8 to 10 minutes.
  8. Stir the bottom and sides frequently to prevent overcooking.
  9. Immediately remove the top of the double boiler from the water and whisk briefly.
  10. Pour into 4 individual serving dishes.
  11. Serve warm or cold with berries, preserves, or cookies.
