Ingredients

  • 2 cups water
  • 2 cups sugar
  • 2 cups vinegar
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 1 tablespoon cinnamon

Instructions

  1. Cook beets whole with 2-inch tops and roots left on until tender.
  2. Dip cooked beets in cold water and peel.
  3. Slice or quarter the beets, leaving small beets whole, using enough to fill 2 quarts, 2 pints, or 6 pints.
  4. Bring water, vinegar, sugar, cloves, allspice, and cinnamon to a boil and cook for 15 minutes.
  5. Combine the cooked beets with the hot pickling syrup and store in sterilized jars.
