Ingredients

  • 8 cups peeled, seeded, and sliced zucchini
  • 3/4 cup sugar
  • 1/3 cup lemon juice
  • 1 teaspoon cinnamon

Instructions

  1. Cook the zucchini slices in a mixture of sugar, lemon juice, and cinnamon until the zucchini is transparent and the sugar is melted and syrupy.
  2. Dissolve 2 tablespoons of cornstarch in a small amount of water, then add to the zucchini mixture to thicken the syrup.
