  1. Cut the squash lengthwise into slices about 1/8-inch thick.
  2. Arrange the squash slices in a low Corning dish, layering with slivered butter, grated Italian cheese, salt, and pepper.
  3. Cover the dish and bake at 375°F (190°C) for 15 minutes.
  4. Remove from the oven and take off the lid.
  5. Cover the top of the mixture completely with sliced Velveeta cheese.
  6. Return to the oven and bake until the cheese is melted and the zucchini is tender.
