Ingredients

  • 2 acorn squash (3/4 lb. each)
  • 4 Tbsp. honey
  • 4 tsp. butter
  • 1/8 tsp. lemon peel (grated)

Instructions

  1. Pierce the skin of each squash several times with a fork.
  2. Place the squash on a microwave tray and cook on High for 4 to 5 minutes.
  3. Turn the squash over after 2 minutes of cooking.
  4. Let the squash stand for 3 minutes, then cut each in half.
  5. Scoop out and discard the seeds.
  6. Arrange the squash halves cut side up in a dish.
  7. Top each with honey, butter, and grated lemon peel.
  8. Cover the dish with plastic wrap and microwave for an additional 4 to 5 minutes, or until the squash is tender.
  9. Let stand, covered, for 2 minutes before serving.
