A Simple Macaroon

Ingredients

  • 1/2 cup egg white
  • 1 1/4 cups sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 1/2 cups coconut

Instructions

  1. Whip the egg whites to stiff peaks.
  2. Add the sugar, salt and vanilla with beater/mixer running at medium speed.
  3. Stop mixer and fold coconut into whites by hand.
  4. Drop by the teaspoon-full onto a parchment-lined baking sheet.
  5. Bake at 325 F for 12-15 minutes.
