Adirondack Flapjacks

Ingredients

  • 2 c flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 c milk
  • 6 Tbsp butter, melted
  • 4 large eggs, separated (at room temperature)
  • vegetable oil for frying

Instructions

  1. Combine flour, sugar, baking powder and salt.
  2. Beat egg yolks and add milk and butter.
  3. Stir into flour mixture until just moistened.
  4. In small bowl beat eggs whites until stiff peaks form. Fold into batter.
  5. In large skillet, heat 1 teaspoon oil over medium heat.
  6. Use about 1/2 cup batter for each flapjack.
  7. Fry until surface appears dry and bubbles form around edge.
  8. Turn and fry on other side until done.
  9. Remove and keep warm until all cakes have been fried, adding more oil to skillet if necessary.
