Adirondack Flapjacks
Ingredients
Instructions
- Combine flour, sugar, baking powder and salt.
- Beat egg yolks and add milk and butter.
- Stir into flour mixture until just moistened.
- In small bowl beat eggs whites until stiff peaks form. Fold into batter.
- In large skillet, heat 1 teaspoon oil over medium heat.
- Use about 1/2 cup batter for each flapjack.
- Fry until surface appears dry and bubbles form around edge.
- Turn and fry on other side until done.
- Remove and keep warm until all cakes have been fried, adding more oil to skillet if necessary.
