Ingredients

  • 1/2 cup butter or margarine
  • 3 cups onions
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon curry powder
  • 1 teaspoon salt
  • 2 cloves garlic
  • 1/4 cup tomato paste
  • 3/4 cup water

Instructions

  1. Saute onions in butter until tender and golden.
  2. Mix ground ginger, curry powder, salt, garlic, and tomato paste with water to create a sauce.
  3. Add the sauce to the onion mixture and stir well.
  4. Add 2 to 3 pounds of skinless chicken breasts to the sauce.
  5. Simmer until the chicken is cooked through.
  6. Serve over rice.
