Ingredients

  • small cucumbers to fill glass gallon jar
  • 2 heaping tsp. pickling spices
  • 1 tsp. pickling salt
  • vinegar to cover
  • 4 lb. sugar

Instructions

  1. Wash small cucumbers thoroughly.
  2. Pack the cucumbers into a glass gallon jar, pressing as many as possible inside.
  3. Place pickling spices and salt in a thin cloth, tie with string or thread, and place in the middle of the jar while packing the cucumbers.
  4. Cover the cucumbers with vinegar and put the lid on tightly.
  5. Let the jar stand for 6 weeks to pickle.
  6. After 6 weeks, remove vinegar and spices from the jar.
  7. Slice the cucumbers and layer them with sugar in a container.
  8. Stir until the sugar is melted, then leave overnight to absorb flavors.
  9. Transfer the sliced pickles into jars for storage.

Tips & Substitutions

For a more unique flavor, consider adding a few cloves of garlic or a pinch of crushed red pepper to the pickling spices. If you can't find small cucumbers, you can use regular cucumbers, just cut them into spears. Ensure the jar is sterilized to prevent spoilage. Taste the sugar layer and adjust according to your sweetness preference; feel free to swap out sugar with a sugar substitute for a lower-calorie option.

Serving Suggestions

These sweet pickles are perfect as a tangy side dish or served alongside sandwiches, burgers, or charcuterie boards. They also add a delightful crunch to salads or can be chopped and mixed into potato salad. Try pairing them with Easy Rice And Peas for a delightful contrast of flavors.

Storage & Reheating

Once prepared, store the pickles in airtight jars in the refrigerator. They can last for several months if properly sealed. For best flavor, consume within three months. If you notice any off odors or signs of spoilage, discard the pickles. No reheating is necessary as they are enjoyed cold.

Frequently Asked Questions

Can I use a different type of vinegar for pickling?

Yes, you can use other types of vinegar such as apple cider vinegar for a milder taste or white wine vinegar for a slightly fruity flavor. Just ensure that the vinegar you choose is suitable for pickling and has a similar acidity level to distilled vinegar.

How can I adjust the sweetness of the pickles?

To make the pickles less sweet, reduce the amount of sugar used when layering the cucumbers. You can also experiment by adding a bit of apple cider vinegar to balance the sweetness with acidity. Tasting the mixture before sealing will help you find the right balance for your preference.

Can I use larger cucumbers for this recipe?

While small cucumbers are ideal for pickling, larger cucumbers can be used if cut into spears or slices. Just be sure to adjust the packing process to fit them into the jar without crushing. The pickling time may also vary slightly, so taste them after the initial pickling period.
