Ingredients

  • 2 1/2 cups sugar
  • 2 egg whites
  • 1/2 cup water
  • 1/2 cup light white syrup
  • 1 1/2 teaspoons vanilla

Instructions

  1. Combine sugar, light white syrup, and water in a saucepan.
  2. Cook to soft boil stage.
  3. Pour the hot syrup mixture slowly over beaten egg whites, beating constantly.
  4. Add vanilla extract to the mixture.
  5. Beat until the icing is almost cold and stiff enough to hold its shape.
