Ingredients

  • 4 cups whole milk
  • 1/4 teaspoon salt
  • 1/4 cup evaporated milk
  • 1/2 cup sugar
  • 3 teaspoons almond extract
  • 2 eggs
  • 1 cup raisins

Instructions

  1. In a large saucepot, warm the whole milk with salt.
  2. Add the rice and stir constantly for approximately 50 minutes until the rice is tender and no longer spiny.
  3. Stir in 1/4 cup evaporated milk and raisins.
  4. In a separate bowl, mix the remaining evaporated milk, eggs, sugar, and almond extract.
  5. Take 1 cup of cooked rice and mix it into the egg mixture.
  6. Add the egg mixture to the rice in the pot and cook until bubbly.
  7. Let the pudding cool, then add 1 more cup of whole milk.
  8. Refrigerate overnight, stir well, and add more milk to reach desired consistency.
