- In a large saucepot, warm the whole milk with salt.
- Add the rice and stir constantly for approximately 50 minutes until the rice is tender and no longer spiny.
- Stir in 1/4 cup evaporated milk and raisins.
- In a separate bowl, mix the remaining evaporated milk, eggs, sugar, and almond extract.
- Take 1 cup of cooked rice and mix it into the egg mixture.
- Add the egg mixture to the rice in the pot and cook until bubbly.
- Let the pudding cool, then add 1 more cup of whole milk.
- Refrigerate overnight, stir well, and add more milk to reach desired consistency.
