Almond Tarts

Ingredients

  • 4 oz. pastry
  • apricot jam
  • 4 oz. almonds, sliced
  • 2 oz. almond paste
  • 2 oz. sugar
  • 2 oz. margarine or butter
  • 1 egg
  • juice of lemon

Instructions

  1. Cream together the margarine and sugar.
  2. Beat in eggs.
  3. Add almonds, paste and lemon juice.
  4. Use tart pans; cut pastry to fit. Fill each 1/2 full of mixture.
  5. Bake at 450° for 7 minutes. Reduce to 350°; bake for 30 minutes.
  6. Dust with sugar.
  7. On each tart, place dab of jam.
