Amaretto Compote

Ingredients

  • 2 cups water
  • 1/2 cup dried apricots
  • 1 cup Amaretto
  • 1 teaspoon shredded lemon peel
  • 1 cup dried, pitted prunes

Instructions

  1. In a saucepan, combine water, prunes, and apricots.
  2. Bring to a boil.
  3. Remove from heat and let stand for 15 minutes.
  4. Drain, reserving 1/2 cup of the liquid.
  5. In the same pan, combine the reserved liquid, pears, Amaretto, sugar, and lemon peel.
  6. Bring to a boil, then reduce heat.
  7. Cover and simmer for 8 to 10 minutes or until pears are crisp-tender.
  8. Stir in prunes and apricots; heat through.
  9. Spoon into 4 individual serving dishes.
  10. Serve warm.
