A refreshing and crunchy apple salad with carrots, celery, and optional nuts and raisins, perfect as a light side or healthy snack for any occasion.

Ingredients

  • 3 apples
  • 6 to 8 large carrots
  • 2 small packages raisins
  • 4 stalks celery
  • 5 tablespoons mayonnaise or 3/4 cup low-fat yogurt
  • 2 tablespoons relish (optional)
  • 1 cup chopped walnuts (optional)

Instructions

  1. Peel, core, and cut the apples into small chunks.
  2. Peel and grate the carrots or make long, thin strips with a vegetable peeler. Chop the celery into small pieces.
  3. Mix the carrots, celery, and apples together with a fork.
  4. Add the raisins, mayonnaise or yogurt, relish (if using), and chopped walnuts (if using). Mix until well coated.
