Ingredients

  • 1 can sliced pineapple (cold)
  • 2 to 3 peeled oranges
  • squeeze of fresh lemon juice
  • cold maraschino cherries or strawberries
  • thawed cold Cool Whip
  • Angel Flake coconut

Instructions

  1. Peel and slice the oranges.
  2. Squeeze fresh lemon juice over the orange slices and store, covered, in the refrigerator.
  3. Drain the canned pineapple slices and maraschino cherries or wash and hull strawberries just before serving.
  4. Arrange a layer of orange slices on a large platter.
  5. Add a layer of pineapple slices on top of the orange layer.
  6. Sprinkle coconut to taste over all.
  7. Just before serving, spoon a dollop of thawed Cool Whip into the center of each pineapple slice and top each with a cherry or strawberry.

Tips & Substitutions

For a creamier texture, consider using whipped cream instead of Cool Whip. You can also substitute the maraschino cherries with fresh berries for a more natural sweetness. If you're short on time, pre-sliced fruits are available at most grocery stores. For additional flavor, add a pinch of cinnamon or a splash of vanilla extract to the Cool Whip.

Serving Suggestions

Serve Ambrosia Salad as a refreshing side dish at summer barbecues or family gatherings. It pairs beautifully with Honey-Pecan Biscuits or can be enjoyed as a light dessert. Consider adding a sprinkle of chopped nuts for extra crunch or serving alongside your favorite grilled meats for a delightful balance.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 2 days. The fruit may release some juices, so it's best to consume within this timeframe to maintain freshness. Avoid freezing the salad, as the texture of the fruit and whipped topping will change when thawed.
