Ingredients

  • 1 cup blueberries
  • 6 cups strawberries, sliced
  • 2 to 3 tablespoons sugar
  • 2 cups flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon grated orange rind
  • 1/3 cup shortening
  • 3/4 cup milk

Instructions

  1. Mix blueberries and sliced strawberries with sugar; set aside.
  2. Combine dry ingredients with grated orange rind and cut in shortening until crumbly.
  3. Stir in milk just until blended.
  4. Turn out the dough on a lightly floured surface and knead 10 to 12 times.
  5. Pat out to 1/2-inch thickness and cut into 3-inch circles.
  6. Place the circles 1 inch apart on an ungreased cookie sheet.
  7. Bake at 450°F (230°C) until golden brown, about 10 to 12 minutes.
  8. Split the biscuits and fill with whipped cream and berries.
