Ingredients

  • 2 pound dried pinto beans
  • 2 onions, chopped
  • 1 pound bacon, chopped
  • 2 jalapenos
  • 3 cups chicken broth
  • 2 teaspoon garlic
  • 1 tablespoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 can tomato paste
  • 2 tablespoon italian seasoning

Instructions

  1. cook dried beans in pressure cooker for no more than 30 minutes
  2. saute chopped onion and garlic in olive oil for ~10 minutes. Add black pepper, italian seasoning and cayenne. Cook another 3 minutes
  3. Add beans, onion mix and stock to large pot along with other ingredients. Bring to a boil, lower heat and let simmer for at least one hour
