Ingredients

  • 5 (8 oz.) packages cream cheese, softened
  • 1 3/4 cups sugar
  • 1 teaspoon vanilla
  • 6 eggs
  • 3 tablespoons flour
  • 1/2 cup oleo
  • 1/4 cup evaporated milk
  • vanilla wafers or graham crackers
  • 2 cans cherry pie filling

Instructions

  1. Preheat oven and prepare mini cupcake papers in a muffin tin.
  2. In a large mixing bowl, beat softened cream cheese until smooth.
  3. Gradually add sugar and vanilla, mixing well.
  4. Add eggs one at a time, mixing after each addition.
  5. Stir in flour and melted oleo until fully combined.
  6. Mix in evaporated milk until smooth.
  7. Line mini cupcake papers with vanilla wafers or graham crackers.
  8. Pour the cream cheese mixture over the wafers in each cup.
  9. Bake in a preheated oven at 350°F (175°C) for about 45 minutes or until set.
  10. Allow cheesecakes to cool completely.
  11. Top each with cherry pie filling before serving.
