Ingredients

  • 6 large potatoes
  • 8 oz. sour cream
  • 1 stick butter
  • 1/2 cup cheese
  • 1/4 cup milk
  • chives (optional)

Instructions

  1. Microwave the potatoes until cooked thoroughly.
  2. Cut the cooked potatoes into chunks with the peel and place into a large casserole dish.
  3. Add sour cream, butter, cheese, and milk to the potatoes.
  4. Mash and mix everything together until reaching a mashed potato consistency.
  5. Top with more cheese.
  6. Microwave for an additional 5 minutes to melt the cheese.
