Ingredients

  • 3 lb. stew beef
  • 1 cup ground acorn meal
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 quarts water

Instructions

  1. Cover the stew beef with water and bring to a boil in a heavy pot. Simmer until the beef is tender.
  2. Remove the beef from the broth and chop it on a flat stone until it is split into shreds.
  3. Add salt and pepper to the broth as the meat cooks tender.
  4. Mix the chopped meat with ground acorn meal, then add to the boiling broth.
  5. Simmer the mixture vigorously until the broth bubbles creamy white with yellow flecks, and is pleasantly acorn scented and flavored.
