Ingredients

  • 6 McIintosh apples, peeled and sliced very thin
  • scant 1/4 c. raisins
  • 2 Tbsp. sliced almonds, blanched or unblanched
  • 1/4 tsp. cinnamon
  • 1/4 c. sugar
  • 1 egg
  • puff pastry

Instructions

  1. Use any standard recipe for puff pastry.
  2. To save time, use prepared puff pastry which can be purchased in sheets in the grocery store.
  3. Roll out puff pastry to a very thin layer.
  4. Use a pastry cloth which has been floured thoroughly.
  5. The dough should be about 18 inches long and 6 to 7 inches wide.
  6. Mix apples, raisins, almonds, sugar and cinnamon in a bowl.
  7. Spread this mixture on the dough, leaving a 1-inch border on all sides.
  8. At the end of the dough farthest away from you, fold over the 1 inch of dough onto the apples.
  9. Then fold over the inch on each side. Grasp the pastry cloth on the far side and pull carefully up and towards yourself, making the dough form a roll.
  10. Using a pastry cloth to drop the roll, place it on a greased sheet pan, seam down. Beat the egg and brush about 1/2 of it onto the strudel top to form a glaze.
  11. Bake in a preheated 400° oven for 10 to 12 minutes. Serve a la mode or with whipped cream.
