Apple Cinnamon Souffle

Ingredients

  • 4 None Granny Smith apples, peeled, cored and quartered
  • 1 None cinnamon stick
  • 1/2 cup granulated sugar
  • 2 None eggs
  • 1 tsp vanilla extract
  • 1 tbsp finely grated lemon peel
  • 1/2 cup self-rising flour, sifted
  • 1/4 cup flaked coconut
  • 2 tsp powdered sugar
  • None None Ice cream, to serve

Instructions

  1. Preheat the oven to 350°F. Grease four 1-cup baking dishes.
  2. Combine apples, cinnamon, 1/4 cup of the granulated sugar and 1/4 cup water in a medium saucepan on medium heat. Cook, covered, for 8 mins, or until apples are tender. Discard cinnamon. Spoon apple into prepared dishes.
  3. Beat eggs, vanilla, lemon peel and remaining 1/4 cup sugar in a medium bowl with an electric mixer until thick and creamy. Fold in flour and coconut. Spoon over apple. Place dishes on a baking pan.
  4. Bake for 15 mins, or until lightly browned. Let stand for 5 mins. Dust with sifted powdered sugar and serve with ice cream.
