Apple Coconut Salad

Ingredients

  • 1 c. diced apples
  • 3/4 c. grated coconut
  • 7 Tbsp. orange juice and pulp
  • 1/4 tsp. salt
  • 3 Tbsp. plum jelly
  • 1 c. celery, diced
  • 2 Tbsp. lemon juice
  • 3 Tbsp. olive oil
  • 1/4 tsp. paprika

Instructions

  1. Combine apple, celery and coconut.
  2. Sprinkle with lemon juice. Mix oil, orange juice, salt and paprika in a separate container. Fold in apple mixture.
  3. Dot with plum jelly after arranged on bed of lettuce.
  4. Serves 3.
