Apple Meringue Pudding

- Slice the Swiss roll and lay the pieces in the bottom of a 2‑pint souffle dish.
- Spoon grated lemon rind and juice over the roll, then spread the apple puree evenly on top.
- Whisk the egg whites until stiff peaks form, then gradually fold in half of the sugar until the meringue is again stiff.
- Spread the meringue over the apple layer and shape it into peaks with the back of a spoon.
- Dust the remaining sugar over the meringue peaks.
- Bake in a preheated oven at 300°F (150°C) for about 30 minutes, or until the meringue is golden and the base is set.
- Serve the pudding warm, optionally with a dollop of whipped cream or a drizzle of caramel.
