Ingredients

  • 6 oz jam Swiss roll
  • 1 large lemon rind and juice
  • 1 1/4 lb unsweetened apple puree
  • 2 egg whites
  • 1 oz sugar

Instructions

  1. Slice the Swiss roll and lay the pieces in the bottom of a 2‑pint souffle dish.
  2. Spoon grated lemon rind and juice over the roll, then spread the apple puree evenly on top.
  3. Whisk the egg whites until stiff peaks form, then gradually fold in half of the sugar until the meringue is again stiff.
  4. Spread the meringue over the apple layer and shape it into peaks with the back of a spoon.
  5. Dust the remaining sugar over the meringue peaks.
  6. Bake in a preheated oven at 300°F (150°C) for about 30 minutes, or until the meringue is golden and the base is set.
  7. Serve the pudding warm, optionally with a dollop of whipped cream or a drizzle of caramel.
