Apple Pancake Souffle

Ingredients
- 1 cup plus 2 tablespoons flour ⓘ
- 1/2 teaspoon salt ⓘ
- 2 cups fat-free egg substitute ⓘ
- 1 teaspoon vanilla extract ⓘ
- 6 apples, peeled and thinly sliced ⓘ
- 3 tablespoons sugar ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 2 cups skim milk ⓘ
- 2 tablespoons unsalted stick margarine ⓘ
- 3 tablespoons light brown sugar, firmly packed ⓘ
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, combine the flour, sugar, salt, and cinnamon; make a well in the center.
- Add the egg substitute, milk, and vanilla; whisk until thoroughly combined.
- Place the margarine in a 9 x 13-inch baking dish; put it in the oven until the margarine is melted and sizzling, about 3 minutes.
- Add the sliced apples and gently mix to coat them with the margarine.
- Bake until the apples are heated through, about 5 minutes.
- Pour the egg mixture over the apples in the baking dish.
- Sprinkle the brown sugar evenly over the top.
- Bake until the souffle is puffed and golden, and a knife inserted in the center comes out clean, about 35 minutes.
- Serve immediately.
