Ingredients

  • 1 cup plus 2 tablespoons flour
  • 1/2 teaspoon salt
  • 2 cups fat-free egg substitute
  • 1 teaspoon vanilla extract
  • 6 apples, peeled and thinly sliced
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 2 cups skim milk
  • 2 tablespoons unsalted stick margarine
  • 3 tablespoons light brown sugar, firmly packed

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine the flour, sugar, salt, and cinnamon; make a well in the center.
  3. Add the egg substitute, milk, and vanilla; whisk until thoroughly combined.
  4. Place the margarine in a 9 x 13-inch baking dish; put it in the oven until the margarine is melted and sizzling, about 3 minutes.
  5. Add the sliced apples and gently mix to coat them with the margarine.
  6. Bake until the apples are heated through, about 5 minutes.
  7. Pour the egg mixture over the apples in the baking dish.
  8. Sprinkle the brown sugar evenly over the top.
  9. Bake until the souffle is puffed and golden, and a knife inserted in the center comes out clean, about 35 minutes.
  10. Serve immediately.
