Apple Red Cabbage

Ingredients

  • 1/4 c. margarine or butter
  • 3/4 c. onion, finely chopped
  • 5 c. firmly packed finely shredded red cabbage
  • juice of 2 lemons
  • 2 to 4 Tbsp. sugar
  • 2 c. thinly sliced pared apples
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. In a large saucepan or skillet, gently cook the onion in the hot margarine until golden.
  2. Add remaining ingredients.
  3. Cover and cook gently, stirring occasionally, until cabbage is tender. Taste and correct the sweet-sour taste.
  4. Serve hot.
  5. Makes about 6 servings.
  6. Good with pork.
