Apple Snacking Cake

Ingredients

  • 3/4 c. oil
  • 2 eggs
  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3 c. chopped apples
  • 1 c. chopped nuts
  • 2 1/2 c. flour
  • 1 (6 oz.) pkg. butterscotch morsels

Instructions

  1. Combine oil, eggs and sugar in large mixing bowl; beat until well mixed.
  2. Combine flour, soda, baking powder and cinnamon; stir.
  3. Add dry ingredients alternately with apples to egg mixture, mixing well.
  4. Stir in nuts and half of butterscotch morsels. Spread batter in a greased 13 x 9 x 2-inch pan.
  5. Sprinkle batter with remaining morsels.
  6. Bake at 350° for 60 minutes.
