Apple Sponge Cake

- Butter a 1 1/2-quart baking dish and pour in melted butter. Combine apples, sugar, lemon juice and corn syrup, mixing well. Transfer to buttered casserole.
- Beat egg yolks until thick.
- Add brown sugar and flour, beating well.
- Add vanilla, then fold in stiffly beaten egg whites.
- Cover apples with batter and bake at 350° for 40 minutes.
- Good with heavy cream or soft vanilla ice cream.
- Serves 6.
