Apple Sponge Cake

Ingredients

  • 1/4 c. melted butter
  • 5 c. apples, peeled, cored and diced
  • 1/4 c. fresh lemon juice
  • 3 Tbsp. light corn syrup
  • 1/2 c. sugar
  • 3 egg yolks
  • 1/2 c. brown sugar
  • 1/2 c. flour
  • 1 tsp. vanilla
  • 3 egg whites, stiffly beaten

Instructions

  1. Butter a 1 1/2-quart baking dish and pour in melted butter. Combine apples, sugar, lemon juice and corn syrup, mixing well. Transfer to buttered casserole.
  2. Beat egg yolks until thick.
  3. Add brown sugar and flour, beating well.
  4. Add vanilla, then fold in stiffly beaten egg whites.
  5. Cover apples with batter and bake at 350° for 40 minutes.
  6. Good with heavy cream or soft vanilla ice cream.
  7. Serves 6.
