Ingredients

  • 1 small (about 1 lb.) butternut or buttercup squash
  • 1/2 cup apple cider or water
  • 2 small apples peeled and cubed
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon margarine or butter (optional)

Instructions

  1. Peel and seed the squash, then cut into 1/2-inch cubes.
  2. Combine the squash and apple cider in a medium saucepan and cover.
  3. Cook over medium heat for 10 to 12 minutes or until the squash is almost tender.
  4. Add the peeled and cubed apples, sugar, cinnamon, nutmeg, and margarine or butter if desired.
  5. Cover and cook for an additional 4 to 5 minutes or until both squash and apples are very tender.
