Ingredients

  • 2 cups 2% milk
  • 8 oz. Neufchatel cheese, softened
  • 2 small packages vanilla sugar-free instant pudding
  • 1 teaspoon cinnamon, divided
  • 1 graham cracker crust
  • 1 can sliced apples, drained and diced
  • sugar substitute to taste

Instructions

  1. Gradually beat milk into softened Neufchatel cheese in a large bowl until smooth.
  2. Add vanilla sugar-free pudding mixes and 1/2 teaspoon of cinnamon, then beat for one or two minutes.
  3. Pour the mixture into the graham cracker crust.
  4. In a small bowl, mix drained and diced sliced apples with the remaining 1/2 teaspoon of cinnamon.
  5. Sweeten the apple mixture to taste with sugar substitute.
  6. Spoon the apple mixture over the pudding layer in the crust.
  7. Refrigerate for 4 hours or until set.
