Apple, Walnut & Banana Bread
Ingredients
- 2 bananas ⓘ
- 2 apple peeled and cut into small squares ⓘ
- 1/3 cup coconut sugar Other sugars work too but you may only use 1/4 cup ⓘ
- 3/4 chickpea flour Again other flours work fine ⓘ
- 1 cup almond meal ⓘ
- 1 teaspoon maple syrup Alternates are honey or agave
- 1 teaspoon baking soda ⓘ
- 1 pinch salt ⓘ
- 1 teaspoon cinnamon ⓘ
- 1/4 cup chopped walnuts ⓘ
Instructions
- Preheat oven to 180°C. Line a bread pan with Baking Paper.
- In a bowl, mash the bananas with a fork.
- Add the apple cubes, Coconut sugar, flour, Almond Meal, baking soda, salt, syrup, nuts & cinnamon to the bowl, and mix well. Pour into bread pan, sprinkle with chosen toppings
- Bake for 45-60 minutes
- Allow to cool for 15 minutes then transfer out of pan
