- In a cooking pot, combine apples, apple cider, granulated sugar, brown sugar, grated lemon rind, lemon juice, cinnamon, cloves, nutmeg, and salt.
- Simmer, covered, for 15 minutes, stirring once or twice.
- Uncover and cook until apples are tender.
- Partially mash the apples to leave the mixture chunky.
- Let cool, then refrigerate before serving.
