Apricot Appeals are delightful baked treats featuring dried apricots and a sweet, buttery batter, perfect for brunch or a comforting snack for fruit lovers.

Ingredients

  • 1 1/2 c. pastry flour
  • 3/4 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. liquid
  • 1 egg
  • 3 Tbsp. melted fat

Instructions

  1. Take a deep muffin tin.
  2. In each ring, put 1 teaspoon melted butter.
  3. Add 1 tablespoon of brown sugar to melt.
  4. Place about 3 stewed dried apricots (depending on size of muffin tin) on the sugar in each ring.
  5. Sift dry ingredients in mixing bowl.
  6. Add liquids; mix until smooth.
  7. Put batter in ring on top of apricots.
  8. Bake for 20 minutes at 375°F.
  9. Turn upside-down as soon as taken from the oven.
