Apricot Lamb

Ingredients

  • 2 1/2 lb. boneless lamb
  • 1 c. apricot nectar
  • 1/4 c. white wine
  • 1 small onion, grated
  • 1 Tbsp. honey
  • 1/4 tsp. ginger
  • 1/4 tsp. allspice
  • salt and pepper to taste

Instructions

  1. Trim lamb and cut in 1-inch cubes.
  2. Thread onto bamboo skewers.
  3. Mix ingredients in a glass dish.
  4. Add lamb and turn to coat. Marinate for 1 hour, turning occasionally.
