Ingredients

  • 2 1/2 Tbsp. cornstarch
  • 1 1/2 cups scalded sweet milk
  • 1/2 cup sugar
  • 3 egg yolks
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt
  • 1/2 cup cooked, drained apricots

Instructions

  1. Sift together cornstarch and sugar.
  2. Add beaten egg yolks and blend thoroughly.
  3. Add scalded milk slowly, stirring constantly.
  4. Cook in the top of a double boiler until thick, then remove from heat.
  5. Add salt and vanilla.
  6. Fold in 1/2 cup mashed apricots which have been drained and sieved.
  7. Cool the mixture slightly and pour into a cooked pastry shell.
  8. Top with meringue and bake until golden brown.
