Apricot Orange Butter Recipe

Ingredients

  • 4 c. coarsely-minced apricots
  • 1/2 c. minced orange
  • 3/4 c. water
  • 2 Tbsp. lemon juice
  • 3 1/2 c. sugar

Instructions

  1. Prepare home canning jars and lids according to manufacturer's instructions.
  2. Cook apricots and orange in water till tender.
  3. Press through a sieve or possibly food mill.
  4. Combine apricot and orange pulp, lemon juice and sugar in a large saucepot.
  5. Cook till thick sufficient to round up on a spoon.
  6. As mix thickens, stir frequently to prevent sticking.
  7. Ladle warm butter into warm jars, leaving 1/4-inch headspace.
  8. Adjust two-piece caps.
  9. Process 10 min in a boiling-water canner.
  10. This recipe yields about 3 half-pints.
  11. Yield: 3 half-pints
