Ingredients

  • 1 1/2 lb. Jerusalem artichokes, peeled
  • peanut oil
  • sea salt

Instructions

  1. Slice the Jerusalem artichokes into thin chips as thinly as possible.
  2. Rinse the chips under cold water; pat dry with paper towels.
  3. Deep fry the chips in hot, but not smoking, peanut oil in batches until pale golden.
  4. Drain the chips and briefly fry them again to a crisp golden brown.
  5. Drain each batch on a paper towel-lined baking sheet and keep warm in a low oven.
  6. Season generously with sea salt and serve immediately.
