Ingredients

  • 1 1/2 lb fresh asparagus
  • 2 Tbsp grated fresh lemon zest
  • 2 Tbsp anchovy paste
  • 2 Tbsp fresh lemon juice
  • shaved Parmesan cheese to taste

Instructions

  1. Snap off the tough ends of the asparagus; peel the stalks.
  2. Steam the stalks in a small amount of water in a saucepan until tender-crisp.
  3. Refresh in ice water and drain.
  4. Combine the lemon zest, anchovy paste, and lemon juice in a bowl; mix well.
  5. Place the asparagus in a serving bowl.
  6. Spoon the lemon rind relish over the asparagus; garnish lightly with shaved Parmesan cheese.
  7. For presentation, tie bundles of asparagus with softened scallions or leeks in bows.
