Perchy Pasta combines flaky baked perch with tender pasta, infused with lemon, herbs, and spices for a light, flavorful seafood dish suitable for quick weeknight dinners.

Ingredients

  • 1 lb. perch fillets
  • 8 oz. pasta ruffles or twists
  • 4 tsp. olive oil
  • 4 tsp. melted margarine
  • 1 lemon
  • spike or oregano
  • salt
  • pepper
  • paprika

Instructions

  1. Preheat oven to 450°F.
  2. Rinse the perch fillets, pat dry, and place in a baking pan.
  3. Season both sides of the fish with 4 tsp. olive oil, 4 tsp. melted margarine, spike or oregano, salt, pepper, and lemon juice.
  4. Top the fish with paprika.
  5. Bake for 15 minutes.
  6. Meanwhile, boil the pasta in an uncovered pot for 10 minutes, stirring occasionally.
  7. Drain the cooked pasta.
