Ingredients

  • 24 cherrystone clams or mussels
  • 6 Tbsp. olive oil
  • 1 large onion
  • 1 small green pepper
  • 2 to 3 cloves garlic
  • 1 c. tomatoes
  • 2 lb. firm white fish
  • 1 lb. squid
  • 1/4 c. parsley
  • 1 1/2 c. dry white wine
  • salt and pepper
  • 8 slices bread

Instructions

  1. Scrub the clams or mussels under running water and set aside.
  2. In a heavy kettle, sauté the chopped onion, green pepper, and minced garlic in 1 tablespoon of olive oil for 5 minutes.
  3. Add the tomatoes and their liquid to the vegetable mixture and bring to a boil.
  4. Cut the firm white fish into 1 1/2-inch wide pieces.
  5. If using squid, clean thoroughly and cut into 2 x 1/2-inch strips.
  6. Place the clams or mussels in the bottom of the kettle.
  7. Pour 4 tablespoons of olive oil over the shellfish.
  8. Scatter half of the vegetable mixture over the shellfish.
  9. Add the fish and squid on top of the vegetables.
  10. Spread the remaining vegetable mixture over the fish and squid.
  11. Pour the white wine over all the ingredients.
  12. Cover the kettle and bring to a boil.
  13. Reduce heat to low and simmer until the clams are open and the fish flakes easily, about 20 to 30 minutes.
