Ingredients

  • 1 qt. peaches
  • 2 Tbsp. cornstarch
  • 1/2 tsp. lemon juice
  • 1 Tbsp. sugar
  • confectioners sugar

Instructions

  1. Crush 1 generous cup of peaches in a saucepan, extracting as much juice as possible.
  2. Stir in cornstarch, lemon juice, and sugar; simmer briefly over medium heat until a clear gelatinous mixture forms.
  3. Let the mixture cool.
  4. Spread into a pan with a crust base and press it in.
  5. Press the rest of the peaches into the crust.
  6. Dust with confectioners sugar and refrigerate before serving.
