- First, combine the cake flour, bread flour, salt, and olive oil in a large bowl.
- Crack the eggs, and beat thoroughly (we will proceed to add in the egg over three turns).
- Add in 1/3 of the eggs, and stir until the dough is crumbly.
- After the dough has become crumbly, add in more egg and continue to mix.
- Next, add in the remaining egg, and knead (until smooth).
- Once the dough becomes glossy, wrap it up in plastic wrap and let sit in the fridge for 1-2 hours.
- Take the dough out of the fridge, divide into 2-4 equal portions, dust with flour, roll out to your desired thickness, and cut into your desired length (you can also use a pasta machine).
- This tastes great boiled for a maximum of 10 minutes.
