Authentic Texas Chili

Ingredients

  • 2 pounds course ground meat (beef, pork or combination)
  • 1 onion chopped
  • 1 Tablespoon garlic crushed (2 cloves)
  • 1 28-ounce can diced or whole tomatoes in juice
  • 2 teaspoons salt
  • 2 teaspoons oregano
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon red pepper
  • 7 tablespoons chili powder
  • 1/2 cup chopped green onions
  • 1/2 grated cheddar cheese

Instructions

  1. 1. Sear meat in large skillet for 3 minutes.
  2. 2. Drain off extra fat, still leaving a little to coat the bottom of the pan.
  3. 3. Add onion and and saute until translucent, about 4 minutes.
  4. 4. Add garlic and saute 2 minutes.
  5. 5. Crush tomatoes and mix into pan with their juice, and one can of water.
  6. 6. Stir in cumin and chili powder and other seasonings.
  7. 7. Simmer over low heat until meat is tender and chili thickens slightly, stirring occasionally, about 1 hour.
  8. 8. Optionally you can add a can of red beans - but chili purists are particular about this.
  9. 8. Serve chili with green onions and cheese on top.
