Authentic Texas Chili
Ingredients
- 2 pounds course ground meat (beef, pork or combination) ⓘ
- 1 onion chopped ⓘ
- 1 Tablespoon garlic crushed (2 cloves) ⓘ
- 1 28-ounce can diced or whole tomatoes in juice ⓘ
- 2 teaspoons salt ⓘ
- 2 teaspoons oregano ⓘ
- 2 teaspoons paprika ⓘ
- 1 teaspoon ground cumin ⓘ
- 1 tablespoon red pepper
- 7 tablespoons chili powder ⓘ
- 1/2 cup chopped green onions ⓘ
- 1/2 grated cheddar cheese ⓘ
Instructions
- 1. Sear meat in large skillet for 3 minutes.
- 2. Drain off extra fat, still leaving a little to coat the bottom of the pan.
- 3. Add onion and and saute until translucent, about 4 minutes.
- 4. Add garlic and saute 2 minutes.
- 5. Crush tomatoes and mix into pan with their juice, and one can of water.
- 6. Stir in cumin and chili powder and other seasonings.
- 7. Simmer over low heat until meat is tender and chili thickens slightly, stirring occasionally, about 1 hour.
- 8. Optionally you can add a can of red beans - but chili purists are particular about this.
- 8. Serve chili with green onions and cheese on top.
