Avocado Stuffed Cherry Tomatoes
Ingredients
- 1 pint cherry tomatoes ⓘ
- 1 large avocado, peeled and mashed ⓘ
- 4 teaspoons lemon juice ⓘ
- 1 tablespoon finely chopped onion ⓘ
- 1 clove garlic, minced ⓘ
- 1/2 cup finely shredded swiss cheese ⓘ
- 1/4 teaspoon seasoning salt ⓘ
- 6 slices bacon, cooked and finely crumbled or 6 slices bottled bacon bits (optional) ⓘ
Instructions
- Remove the tops from the tomatoes.
- Scoop out and discard the seeds.
- Drain cut-side down on paper towels.
- In a small bowl beat together the avocado through seasoned salt until smooth.
- Stuff the avocado mixture into the tomatoes.
- Serve sprinkled w/ bacon bits.
