Ingredients

  • 2 cups All-purpose Flour
  • 3 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 4 Tablespoons Very Cold Unsalted Butter, Cut Into Small Cubes
  • 2 Tablespoons Shortening, Cold
  • 1 cup Buttermilk

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl mix the flour, sugar, baking powder and salt until combined. Add the cold butter and shortening to the bowl with the flour mixture. Using a pastry cutter, cut in the butter and shortening leaving some pieces that are the size of tiny peas. Add the cold buttermilk all at once.
  3. With the tips of your fingers and using a gentle scooping motion, mix the buttermilk into the flour. Do this just a few times.
  4. Dump the mixture out onto a lightly floured counter and give it a couple of very tender kneads. Gently pat out the dough into a circle 1 inch in height. Using a 2 inch cookie cutter cut out biscuits. You may combine the dough scraps one more time to get more biscuits. After that, you should discard scraps because they will be too overworked.
  5. Lay the biscuits on a parchment lined rimmed half sheet pan. Brush the tops with melted butter.
  6. Bake in the preheated oven, with rack in center of oven, for 12-15 minutes, until the tops are golden brown.
  7. Serve warm with jam or honey.
