Bacon-Corn Cakes

- Cook bacon in a frying pan until crisp.
- Drain and crumble. Reserve 1 tablespoon fat and discard remainder.
- Combine flour, baking soda, salt and sugar.
- Stir in milk that has been mixed with vinegar.
- Beat eggs and bacon grease lightly and add to the batter.
- Fold in corn and reserved crumbled bacon.
- Drop batter from a spoon onto a hot griddle, browning on both sides.
- Keep warm until all are cooked.
- Serves 8.
