Bacon Cornbread Stuffing

Ingredients

  • 4 slices bacon, (cut into 1/2 inch pieces)
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup dried sweetened cranberries
  • 2 1/4 cups water
  • 4 cups (16 oz bag) seasoned cornbread mix
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon dried marjoram

Instructions

  1. Heat oven to 350F.
  2. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  3. In 12-inch nonstick skillet, cook bacon over medium heat about 6 minutes, stirring occasionally, until browned but not crisp.
  4. Stir in bell pepper and onion.
  5. Cook 3 to 4 minutes, stirring occasionally, until tender.
  6. Stir in cranberries.
  7. Add water; heat to boiling.
  8. Remove skillet from heat.
  9. Stir in stuffing mix, seasoned salt and marjoram until well mixed.
  10. Spoon into baking dish.
  11. Cover with foil; bake about 30 minutes or until thoroughly heated.

  13. Do Ahead: You can make this easy stuffing up to 4 hours ahead.
  14. Cover and refrigerate until it's time to bake.
  15. Add 5 to 10 minutes to the bake time.
