Baked Cabbage Puff

Ingredients

  • 3 c. finely shredded cheese
  • 2 c. coarse dry bread crumbs (preferably French bread)
  • 1 1/4 c. grated Cheddar cheese
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. prepared mustard
  • 1/8 tsp. pepper
  • 2 c. milk
  • 1 Tbsp. chopped pimiento

Instructions

  1. Cover cabbage with cold water and heat to boiling.
  2. Drain well.
  3. In buttered, shallow 2-quart baking dish, arrange cabbage, crumbs and cheese in layers, making 2 layers of each.
  4. Beat eggs with salt, mustard and pepper.
  5. Add milk and pimiento and mix well.
  6. Pour over cabbage, pressing mixture down into the liquid. Let stand 20 minutes.
  7. Bake in moderate oven (350°) about 45 minutes, until puffed and set in center of dish.
  8. Yield: 6 to 8 servings.
